Spinach salad with bacon dressing

Ingredients:                                        yield 4 servings

Spinach (washed and picked)  8 oz
Bacon (diced)  2 slices
Balsamic vinegar ¼ cup
Honey  3 Tblsp
Canola oil ½ cup
Red onion (minced)   ½

Garnish:

    Sliced red onion and chopped boiled egg

Procedure:

  1. In a heavy pot cook bacon until crispy.
  2. Add onion and continue to cook
  3. Add honey vinegar and slowly add the oil while stirring
  4. Keep warm.
  5. Place spinach in a salad bowl and right before serving toss with dressing, garnish with egg and onion.
